Zucchini Chowder

Saute:
2 Zucchihi
1 onion
2 T. Minced fresh parsley
1/3 c. butter

Add:
1/3 c.  Flour
1 t. salt
1/4 t. pepper
mix in well

Add:
3 c.  water
3 chicken boullion cubes
1 t.  lemon juice

Add:
14 1/2 oz.  diced tomatos
1 can evaporated milk
1 pkg.  frozen corn

Bring to boil, the reduce to a simmer for 10-15 minutes.

Add:
1/4 c.  grated parmesan cheese
2  c.  shredded cheddar cheese
pinch of sugar.

  1. How do you cut up the zucchini? Dice it?

  2. I just slice it up and then cut the slices in half. I wasn't sure how to do it. I am sure any way is fine.
